Today's inspiration has come from two places. During the rhubarb tasting menu at Mister Kitchen at the Rollende Keukens, I had a bit of a revelation. As part of the main, they had roasted a few chunks of rhubarb and served them with pork, and a slice of their very good sausage. The sausage had fennel seed in it, and I tried this with a bit of the rhubarb, and the combination is incredible.

1. A microwaveable bowl
2. 4oz of margarine /butter salty or unsalted butter
3. 4oz of sugar castor
4. 2 whole eggs
5. 4oz of flour ether plain or self-rising flour

Now you can do the all in one method or cream the butter and sugar first then add the eggs and flour and if you want to you can add some Villella extract to it

Now you can chose what to put in the bottom of the bowl before you put your sponge batter in the bowl
6. Frozen fruit
7. Jam or marmalade
8. Mixed fruit can be added to the sponge for a spotted Dick pudding
9. Chocolate sauce or golden syrup

Then you place it in the microwave for 9 minutes

Then turn it out on to a plate and serve with custard or ice-cream

It was not until I started growing Lemon Grass at the Herb Farm that I discovered how amazingly useful and flavoursome the leaves are both in the kitchen and for herbal remedies.

Overnight, the weather turned cold.

We switched on the gas heater, pulled out jumpers and slippers, and started hunting around for ingredients to make a warm dessert.

On the bench was half a loaf of stale sourdough, destined for the worm farm. It was the perfect base for an impromptu bread and butter pudding! I also had a little fresh ricotta leftover from lunch, treacle, and a few eggs from…

My soil is pretty much clay; it sticks to the spade and I have to stamp it off like I'm squishing a bug. I'm worried about the growing potential of this soil, but I'm assured that potatoes will grow anywhere.
